My name is Trinidad P.Trinidad,Ph.D. My field of specialization is on human and clinical nutrition,functional foods and mineral metabolism.My work includes:iron absorption from Filipino meals;and nutritional and health benefits of coconut flour,root crops and legumes, mallungay(moringa oleifera) and ginger,looking at its dietary fiber and fermentability characteristics,mineral availability,glycemic index and cholesterol lowering effect as well as its phytonutrients and antioxidant activities.I worked as secondment at the International Atomic Energy Agency-United Nation under the Nutrition and Health Related and Environmental Section-Division of Human Health as a Nutrition Scientist(2004-2006),and handled several projects in Asian,African and Latin American countries on projects on minerals and body composition as technical/project officer.I have published 60 papers in peer-reviewed international and local journals,and presented 250 papers,international and loc
